    OATS KHICHDI WITH

    VEGETABLE CONFETTI

     

    The ultimate comfort food, khichdi is a perfect one-pot meal that combines the wholesomeness of rice, lentils and vegetables. To add more nutrition, we replace rice with oats. 

    Preparation time: 20 minutes (Serves 2) 

    For Khichdi 

    Ingredients:

    ·       2 cups rolled oats

    ·       ½ cup toor dal

    ·       1 tsp mustard

    ·       4 cloves garlic

    ·       1 tbsp urad dal

    ·       2 tbsp ghee

    ·       1 pinch methi seeds

    ·       ¼ cup parmesan cheese

    ·       ½ cup green peas

    ·       2 tbsp ghee

    ·       2 tbsp fine broken cashews

    ·       1 carrot

    ·       1 tsp curry leaves powder

    ·       1 tsp jaggery

    ·       4 sprigs of fresh coriander

    ·       1 tsp tamarind pulp

    ·       2 sprigs of curry leaves

    Salt as required 

    For Risotto Masala

    Ingredients:

    ·       4 red chillies (whole)

    ·       1 inch cinnamon stick

    ·       1 tbsp cumin seeds

    ·       2 tbsp coriander seeds

    ·       1 tbsp chana dal

    ·       1 tsp turmeric

    Salt as required

     

    Preparation:

           Dry-roast all the masala ingredients, cool and make a fine powder

           Pressure cook the dal for just one whistle with jaggery and turmeric or boil it for 10 minutes in a pot

           Strain the dal and reserve 2 cups of the same liquid

           In a pan, heat ghee, add slivers of garlic, sauté

           Add dices of vegetables and turmeric

           Stir for 3-4 minutes. Add oats and herbs

           Sauté till the grain gets coated

           Add dal and water and cook for 2 minutes. Finish with coriander, parmesan cheese and risotto masala
