    VADA PAV SLIDERS 

     The brainchild of Ashok Vaidya, and now an iconic Mumbai street food item, Vada pav is our favourite desi burger. 

    Preparation time: 30 minutes (Serves 2)

     For Vada

     Ingredients:

           ½ cup potatoes (boiled)

           ½ tbsp finely chopped garlic

           1 tsp finely chopped ginger

           ½ tbsp coriander powder

           ¾ tsp cumin seeds

           ½ onion (sliced thin)

           ½ tsp cumin powder (roasted) 

    For Batter

     Ingredients:

           1 cup besan

           1 tsp red chilli powder

           1 cup soda water

           1 tsp turmeric powder

           Oil for deep frying

            Salt as required

     

    Preparation:

           Heat oil in a pan, add cumin seeds, coriander seeds,

    chopped ginger and garlic, sliced onion and turmeric

           Add all the spice powders and mashed potatoes

           Mix well and turn the heat off

           Add coriander leaves and lime juice

           Divide the mixture into 6 equal dumplings

           Rest it in the refrigerator for 30 minutes

           Mix besan, turmeric, salt and chilli powder

           Add soda and mix well to attain a batter

           Coat potato dumplings and deep fry in moderate

           hot oil till crisp 

    For Vada Pao Slider 

    Ingredients:

           6 small buns/pav

           3 tbsp peanut chutney (optional)

           1 onion slices

           1 tomato slices

           1 cucumber slices

           60 gms leafy lettuce

           ½ cup mint chutney

           ½ cup jaggery-tamarind chutney

           Satay sticks

           Fried green and fresh red chillies 

    Preparation:

           Cut the bun in halves and butter-toast it on both sides

           Apply both the chutneys

           Assemble slices of vegetables on lettuce bed and season

           Cover the lid of bun pressing it slightly and securing with a stick

           Serve with fried green chillies
