    MAAH DAAL DOABA

    Daal is one of the most popular side dishes in asian cuisines. Maah Daal is a rich, tasty recipe from the Doaba region in Punjab.

     

    Preparation time: 60 minutes (Serves 2-3)

    Ingredients:

           ¾ cup black urad daal

           2 tbsp chana daal

           2 tbsp kidney beans (rajma)

           1 inch ginger (minced)

           3 green chillies (chopped)

           ¼ cup tomato puree

           2 onions (chopped)

           6 cloves garlic (minced)

           ½ cup butter (churned fresh)

           2 tbsp coriander fresh (chopped)

           2 tsp garam masala

           2 tsp cumin powder (roasted)

           3 tbsp ghee

    Mineral salt as required

    Preparation:

           Soak all the daal overnight

           Boil the daal with salt in a pressure cooker/casserole till soft

           Heat the ghee in a casserole

           Add garlic, ginger and green chillies

           Cook for 3-4 minutes

           Add onions and cook till translucent

           Add tomatoes and powdered spices

           Cook on a medium flame for 7-8 minutes

           Add the boiled daal

           Let it simmer for 20 minutes

           Adjust the seasoning

           Finish with butter and coriander
