    SPAGHETTI MEAT BALLS 

    This is a classic Italian-American dish that brings together spaghetti and meatballs, cooked in a rich tomato sauce. 

    Preparation time: 40 minutes (Serves 2)

    For Meat Balls

    Ingredients:

           300 gms lamb meat

           3 cloves garlic

           1 inch ginger

           ½ tsp dry oregano

           ½ tsp paprika powder

           2 tbsp kidney fat

           1 onion (chopped)

           100 gms fresh coriander

           2 tbsp olive oil

           ½ cup fresh bread crumbs

           Salt as required 

    For Sauce

    Ingredients:

           5 tomatoes (canned)

           4 garlic cloves

           1 onion (chopped)

           1 tbsp celery (chopped)

           1 tbsp leeks (chopped)

           2 bay leaves

           30 ml red wine

           ⅓ cup parmesan cheese

           2 tbsp olive oil

           1 tbsp butter

           Blanched spaghetti (boiled for 5 minutes)

           Fresh basil 

    Preparation:

           Mince the lamb with all the ingredients in a coarse mince

           Rest the mince in the refrigerator for an hour

           Form small balls and bake at 170oC for 10 minutes

           In a saucepan, add some olive oil

           Sauté some garlic, celery, onions, leeks and bay leaves

           Add some red wine to de-glaze

           Now add tomatoes and cook slowly

           Add ½ cup water, butter and adjust the seasoning

           Add the spaghetti

           Let it simmer for 5-6 minutes

           When sauce is thick, add the meat balls

           Cover and cook for the next 3-4 minutes

           Serve hot

           Finish with parmesan cheese and basil
