    MANGO AVOCADO GUACAMOLE

    Developed in Mexico and a favourite around the world, guacamole literally translates to ‘Avocado Sauce’. The use of mango in this recipe adds a fresh and seasonal twist to this classic sauce.

    Preparation time: 30 minutes (Serves 2)

    Ingredients:

           1 ripe avocado flesh

           1 ripe mango flesh

           ½ clove garlic (minced) (optional)

           1 tsp cumin powder (roasted)

           1 tbsp coriander leaves (chopped)

           1 tsp coriander stem (chopped)

           1 tbsp parsley or chopped mint

           ½ tsp red chilli powder

           2 jalapeño (chopped)

           1 lime

           1 tbsp olive oil (first press)

        •       Salt as required

     

    Preparation:

           Dice and marinate flesh of the avocado and mango  by adding herbs, chillies, spice and salt

           Muddle the fruits lightly in a mortar

           Finish with a drizzle of oil

           Serve with corn chips/crackers
