    TIRAMISU MATCHA 

    Tiramisu is one of the most popular desserts across the world. This recipe brings together the deliciousness of the dessert and the nutrition of matcha, a type of green tea that’s part of the traditional Japanese tea ceremony. In other words, this dessert is unmissable. 

    Preparation time: 10 minutes (Serves 2) 

    For Matcha Syrup

    Ingredients:

           ¾ cup water

           ½ cup sugar

           1 tbsp matcha (Japanese green tea) 

    For Matcha Cream

    Ingredients:

           1 tbsp sugar

           1 tbsp rum

           2/3 cup mascarpone cheese

           ½ cup heavy cream

           1 tbsp matcha (Japanese green tea) for dusting 

    Preparation:

           Mix water, sugar and matcha in a bowl and whisk well

           Bring matcha syrup mix to a boil and allow it to cool

           Separate egg yolks and whites

           Cook egg yolks, sugar and rum on a double boiler

           Whisk for 5 minutes and let it rest for 5 minutes

           Whip heavy cream till it forms soft peaks

           Fold in the egg mixture

           Sift in the matcha and mix well

           Fold in the mascarpone cheese

           Soak saviordi in matcha syrup and arrange in the dish

           Spread the cream layer

           Dredge matcha powder

           Repeat this process once more

           Set it in the refrigerator to chill for 4-5 hours 

    For Saviordi             

    Ingredients:

           2 eggs

           ½ cup castor sugar

           1 tsp vanilla extract

           ½ cup refined flour

           Salt as required

     

    Preparation:

           Preheat the oven to 190ºC

           Line the tray with silpat

           Separate the eggs

           Whisk the egg yolks with ½ of the sugar and all of the vanilla

           Beat for 5 minutes

           Beat the egg whites in a bowl

           Add sugar and salt

           Gently fold the beaten egg whites into the egg yolks

           Sift the flour over the egg mixture and gently fold it in

           Fill in the piping bag and pipe 3 inches of batter

           Bake for 15 minutes until firm to the touch and golden in colour

           Remove the paper and fingers from the baking sheet and place on the racks to cool
