    POLLO CACCIATORE

     

    Cacciatore means anything cooked in hunter-style. A typical ‘Alla Cacciatore’ uses red or white wine and is often served with bread or pasta. 

    Preparation time: 40 minutes (Serves 2)

    Ingredients:

           1 chicken (cut into 8 pieces)

           4 cloves of garlic

           1 green capsicum (diced)

           2 onions (diced)

           1 stalk celery (diced)

           1 bunch of cilantro (chopped)

           ½ cup olive oil

           2 bay leaves

           1 stalk rosemary

           1 cup refined flour

           6 black pepper corns

           Old red dry house wine

           5 canned tomatoes

           Salt as required 

    Preparation:

           Rub the chicken with some garlic paste, olive oil and salt

           Dredge with seasoned flour

           Heat oil in casserole with lid

           Add bay leaves, rosemary, carrot, peppers, onion and celery

           Sauté for 3-4 minutes

           Add chicken and cook till it starts browning

           Add the red wine and stir continuously

           Add tomatoes and let it simmer

           Cover and simmer

           Finish with fresh herbs
