    MINESTRONE HINTED WITH SEA VEGETABLES

    Milanese is one of the most popular Italian soups. This soup is a version of the Minestrone and is traditionally made with rice instead of pasta. 

    Preparation time: 30 minutes (Serves 2)

    Ingredients:

           ½ cup tomatoes (blanched and crushed)

           1 carrot (diced)

           3 garlic clove (minced)

           1 small onion (diced)

           10 green beans (diced)

           6 baby corn (diced

           ½ zucchini (diced)

           1 tsp oregano

           2 sprigs fresh basil

           ½ cup pasta (macaroni or pasta)

           2 tbsp parmesan cheese (grated)

           2 tbsp olive oil

           4 black pepper (cracked)

           1 tsp sugar

    Salt as required

    Preparation:

           Heat olive oil, sauté onion, garlic and all the vegetables for 2 minutes on medium heat

           Add oregano (optional)

           Add 8 cups of water and let it simmer for 5 minutes

           Add pasta and let it simmer for the next 7-8 minutes. Remove from heat

           Add basil in soup cups

           Pour the soup in the cups

           Sprinkle parmesan cheese, drizzle olive oil and sprinkle cracked pepper. Serve hot
