    Griddled mustard lamb skewers

     

    Serves 6

    Prepare 15 minutes

    Cook 10 minutes

     

    Ingredients

     

    • 200g plain yogurt

    • 1 tsp mustard seeds

    • 1 tsp wholegrain mustard

    • 1 tsp chaat masala

    • 1 tsp ground turmeric

    • 1 tsp paprika

    • ½ head broccoli, cut into florets

    • 1 red pepper, cut into cubes

    • 1 yellow pepper, cut into cubes

    • 500g cubed lamb

    • 1 red onion, cut into pieces

    • 150g cherry tomatoes

    • 1 tbsp olive oil

    • 1 small red chilli, thinly sliced, to garnish

     

    Method1

     

    1 Preheat the grill to high.

    2 Put the yogurt, mustard seeds, wholegrain mustard and ground spices in a bowl. Mix well to combine.

    3 Thread the broccoli florets, pepper and lamb cubes, red onion and cherry tomatoes on to the six skewers from our Truffles Griddle Plate set. Brush with the yogurt mixture until coated all over.

    4 Arrange on the griddle plate and place under the grill. Cook for 5 minutes on each side, or until done to your liking. Garnish with the chilli to serve.
