    White chocolate, pistachio and cranberry fudge

    Makes 16 squares

    Prepare 10 minutes plus, setting

    Cook 5 minutes

     

     

     

    Ingredients

     

    • 400ml sweetened condensed milk

    • 500g white chocolate, broken

    • 1 tsp vanilla extract

    • handful shelled pistachios, chopped

    • 200g dried cranberries, chopped

    • zest of 1 large Orange

     

    Method

     

    1. Line a 20cm square dish with foil.

    2. Put the milk and chocolate in a saucepan set over a medium heat. Stir until the chocolate has melted completely and the mixture is smooth and thick.

    3. Remove from the heat and stir in the vanilla, pistachios, cranberries, orange zest and tsp salt. Pour into the lined dish and smooth the surface.

    4. Leave to set in the fridge for 3 hours or at room temperature overnight. Once set, lift the fudge from the dish and cut into squares.
